1 medium carrot, peeled and chopped

1 can (28 oz) crushed tomatoes, undrained

2 cups vegetable broth (low-sodium recommended)

1 teaspoon dried oregano

½ teaspoon sea salt (or to taste)

¼ teaspoon freshly ground black pepper

½ cup heavy cream (or substitute with coconut milk for a dairy-free version)

1 cup fresh basil leaves, firmly packed

Sauté Aromatics: In a large pot, drizzle the olive oil and heat over medium heat. Add the diced onion and chopped carrot. Sauté for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent. Add the minced garlic and continue to cook for an additional minute, or until the garlic is fragrant.
