Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into thin strips

2 tablespoons vegetable oil, divided

3 cups mixed vegetables (such as bell peppers, broccoli, and snap peas)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup low-sodium soy sauce

1/4 cup honey

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (if using cornstarch)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, combine the sliced chicken with 1 tablespoon of soy sauce, and half of the minced garlic and ginger. Mix well and allow the chicken to marinate for about 10 minutes while you prepare the vegetables.

Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, carefully add the marinated chicken strips in a single layer. Cook for 5-7 minutes, turning occasionally, until the chicken is golden brown and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables and sauté for 2-3 minutes until they become tender-crisp. Then, add the remaining minced garlic and ginger, cooking for an additional minute, stirring continuously until fragrant.

Prepare the Sauce: In a small bowl, whisk together the honey, remaining soy sauce, and cornstarch (if using). If you opted for cornstarch, include 2 tablespoons of water to ensure a smooth blend.

Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Pour the honey sauce over the chicken and vegetables, stirring well to incorporate. Cook everything for another 2-3 minutes until heated through and the sauce has thickened to your desired consistency (if using cornstarch). If you find the sauce too thick, add a splash of water to achieve the desired texture.

Garnish and Serve: Once everything is heated and well mixed, remove the stir-fry from heat. Garnish with sliced green onions and a sprinkle of sesame seeds for added crunch. Serve this delightful dish hot over a bed of cooked rice or noodles to soak up the delectable sauce.
