Ingredients

2 chicken breasts, thinly sliced (about ½ inch thick)

1 cup assorted bell peppers (red, yellow, and green), julienned

1 cup broccoli florets, cleaned

1 cup snap peas, trimmed

1 medium carrot, julienned

2 cloves garlic, minced

1-inch piece of ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce (optional for added depth)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon red pepper flakes (optional, adjust to taste)

1 teaspoon cornstarch mixed with 2 tablespoons water

Salt and pepper to taste

Cooked rice or noodles for serving

Instructions

Prepare Ingredients: Thoroughly wash all vegetables. Slice the chicken breasts into thin strips, ensuring uniform thickness of about ½ inch to promote even cooking.

Marinate Chicken: In a mixing bowl, combine the sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Allow it to marinate for approximately 5 minutes while you prepare the vegetables.

Heat the Wok or Pan: Place a large skillet or wok over medium-high heat. Once hot, add 1 tablespoon of vegetable oil. Introduce the marinated chicken to the pan and stir-fry for about 3-4 minutes, or until the chicken is cooked through and lightly browned. Once done, transfer the chicken to a plate and set it aside.

Sauté Aromatics: In the same skillet, add 1 tablespoon of sesame oil. Toss in the minced garlic and grated ginger. Stir-fry for around 30 seconds or until the mixture becomes fragrant.

Incorporate Vegetables: Add the broccoli florets, snap peas, julienned bell peppers, and carrots to the pan. Stir-fry these colorful vegetables for 4-5 minutes, allowing them to maintain their vibrant color and crisp texture.

Combine Chicken and Sauce: Return the cooked chicken to the pan. Pour in the remaining soy sauce, and oyster sauce (if using), along with the cornstarch-water mixture. Stir the entire mixture together and let it cook for an additional 2 minutes, enabling the sauce to thicken slightly. If you enjoy spice, shake in the red pepper flakes at this stage.

Serve and Enjoy: Taste the stir-fry and adjust the seasoning as needed. Serve the stir-fry hot over bowls of cooked rice or noodles, garnishing with sesame seeds or chopped green onions for an added touch of flavor and presentation.
