Ingredients

1 medium head of cauliflower, cut into bite-sized florets

½ cup all-purpose flour (or gluten-free flour for a GF option)

½ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup cold water (adjust as needed for batter consistency)

½ cup sweet chili sauce

1 tablespoon soy sauce (or tamari for a gluten-free alternative)

1 tablespoon rice vinegar

Optional: chopped green onions and sesame seeds for garnish

Instructions

Prepare the Cauliflower: Start by washing the cauliflower thoroughly. Cut it into uniform bite-sized florets, ensuring they are similar in size for consistent cooking.

Make the Batter: In a large mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined. Gradually add cold water while whisking to create a smooth batter. The desired consistency should be similar to that of pancake batter, thick enough to coat the florets.

Coat the Cauliflower: Dip each cauliflower floret into the prepared batter, ensuring they are evenly coated. Let any excess batter drip off back into the bowl.

Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for approximately 5 minutes to ensure optimum crispiness.

Air Fry the Cauliflower: Place the battered cauliflower florets in a single layer within the air fryer basket, allowing sufficient space between them for even cooking. You may need to cook them in batches depending on your air fryer's capacity.

Cooking Time: Air fry the cauliflower for 12-15 minutes, shaking the basket halfway through cooking to promote even crisping. They should emerge golden brown and have a crispy texture.

Prepare the Sauce: While the cauliflower is air frying, combine the sweet chili sauce, soy sauce, and rice vinegar in a small bowl. Whisk together until the ingredients are fully blended.

Combine and Toss: Once the air-fried cauliflower is done, transfer it to a large serving bowl. Pour the sweet chili sauce mixture over the crispy florets and toss gently to ensure each piece is thoroughly coated.

Serve: For an added touch, garnish with chopped green onions and a sprinkle of sesame seeds, if desired. Serve your spicy sweet chili cauliflower bites immediately while they’re warm for maximum crunch and flavor!
