4 cups fresh baby spinach, thoroughly washed and dried

1 large apple (preferably Gala or Honeycrisp), cored and thinly sliced

1/2 cup dried cranberries

1/2 cup walnuts, toasted and coarsely chopped

1/4 cup feta cheese, crumbled

1/4 red onion, thinly sliced

2 tablespoons extra-virgin olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and freshly ground black pepper, to taste

Prepare the Dressing: In a small mixing bowl, combine the olive oil, apple cider vinegar, honey, salt, and black pepper. Whisk vigorously until all ingredients are well blended and emulsified. Taste and adjust seasoning as desired.
