2 ripe avocados, peeled and pitted

8 slices of crispy cooked bacon

1 cup fresh spinach or arugula, washed and dried

1 large ripe tomato, sliced into rounds

1/4 cup mayonnaise (or Greek yogurt for a lighter alternative)

1 tablespoon fresh lemon juice

Salt and freshly ground black pepper, to taste

Optional: A pinch of red pepper flakes for added heat

Prepare the Avocado Spread: In a medium-sized mixing bowl, use a fork to mash the avocados until they reach a smooth and creamy consistency. Mix in the lemon juice, and season with salt and pepper to your liking. For a hint of spice, feel free to add a pinch of red pepper flakes and mix well.

    Cook the Bacon: Heat a frying pan over medium heat. Add the bacon slices and cook until they are golden brown and crispy, approximately 5-7 minutes. Once cooked, transfer the bacon to a plate lined with paper towels to absorb any excess grease.

      Assemble the Wraps: Place a whole wheat tortilla flat on a clean cutting board or plate. Spread an even layer of the creamy avocado mixture across the center of the tortilla, leaving a small border around the edges to prevent spillage.

        Add the Fillings: Lay two slices of crispy bacon on top of the avocado spread. Next, add a generous handful of fresh spinach or arugula, followed by a few slices of juicy tomato arranged evenly.

          Roll it Up: Begin at one edge of the tortilla and carefully roll it up tightly over the fillings. As you roll, gently tuck in the sides to keep the fillings secure and prevent them from falling out.
