2 ripe avocados

1 cup cherry tomatoes, diced

1/2 cup canned black beans, thoroughly rinsed and drained

1/2 cup corn kernels (you can use canned or frozen, just ensure they're thawed)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, roughly chopped

Juice from 1 lime

1 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1/2 cup feta cheese, crumbled (optional for added flavor)

1/4 cup Greek yogurt or sour cream, for drizzling on top

Prepare the Avocados: Begin by slicing the avocados in half lengthwise. Carefully remove the pit from each half. With a spoon, gently scoop out a small amount of the avocado flesh from the center of each half, creating a little more room for the filling. Place the scooped-out avocado into a mixing bowl and set the empty avocado halves aside.

    Mix the Filling: In the bowl containing the scooped avocado, add the diced cherry tomatoes, drained black beans, thawed corn, finely chopped red onion, and cilantro. Squeeze in the lime juice, then sprinkle in the ground cumin, salt, and pepper. Gently fold all the ingredients together until they are well mixed. Taste the mixture and adjust the seasoning according to your preference.

      Fill the Boats: Take spoonfuls of the filling and carefully pack them into each avocado half, ensuring they are evenly filled and slightly mounded for presentation.
