4 medium flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked chicken, shredded (or use beans for a vegetarian alternative)

1 cup bell peppers, diced (choose any combination of colors)

1/2 cup red onion, thinly sliced

1/4 cup corn (canned or frozen)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and freshly ground black pepper to taste

2 tbsp olive oil (for cooking)

Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Prepare Your Filling: In a large mixing bowl, combine the shredded chicken (or beans) with both types of cheese, diced bell peppers, corn, and red onion. Sprinkle in the cumin, chili powder, garlic powder, and season generously with salt and pepper. Mix everything together until well incorporated and set aside.

    Heat the Pan: Place a large skillet on the stove over medium heat. Add 1 tablespoon of olive oil to the skillet and allow it to heat for about one minute, ensuring it’s hot but not smoking.

      Assemble the Quesadilla: Lay one tortilla flat in the skillet. On one half of the tortilla, spoon a generous amount of the filling mixture. Carefully fold the tortilla over to create a half-moon shape, pressing down gently to seal.

        Cook the Quesadilla: Cook the folded quesadilla for approximately 3-4 minutes on one side, or until it turns golden brown and the cheese begins to melt. Using a spatula, gently flip the quesadilla and add the remaining tablespoon of olive oil to the skillet. Cook the second side for an additional 3-4 minutes until it's also golden and crispy.

          Repeat the Process: Once the first quesadilla is cooked, transfer it to a cutting board. Repeat steps 3 and 4 with the remaining tortillas and filling mixture, ensuring to keep an eye on the skillet’s heat to prevent burning.
