Baked Apple Cider Donuts

1 cup apple cider

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1/4 cup unsweetened applesauce

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup powdered sugar (for dusting, optional)

Extra cinnamon sugar for topping (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare your donut pan by greasing it thoroughly with non-stick spray or a light coating of oil to ensure easy removal later.

    Reduce the Apple Cider: In a small saucepan over medium heat, pour the apple cider and bring it to a boil. Once boiling, reduce the heat to a simmer and continue cooking for about 10 to 15 minutes. Your goal is to reduce it to approximately 1/2 cup. After reduction, set it aside to cool slightly while you prepare the donut batter.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined. Set this mixture aside for later.

        Combine Wet Ingredients: In another bowl, add the granulated sugar, brown sugar, and the egg. Whisk them together until fully incorporated. Next, stir in the applesauce, vegetable oil, vanilla extract, and the slightly cooled reduced apple cider. Mix until the mixture is smooth and uniform in texture.
