Ingredients

1 pound ground chicken

1/2 cup Italian-style breadcrumbs

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese, divided

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (a mix of oregano, basil, and thyme)

1/2 teaspoon red pepper flakes (optional for added heat)

Salt and pepper to taste

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). While it warms up, line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, Italian-style breadcrumbs, grated Parmesan cheese, half of the shredded mozzarella cheese, the egg, minced garlic, Italian herbs, and optional red pepper flakes. Season with salt and pepper. Use your hands or a spatula to mix everything together until the mixture is uniformly combined but avoid overmixing to keep the meatballs tender.

Shape the Meatballs: With your hands, take approximately 2 tablespoons of the mixture and shape it into a ball. Place each meatball on the prepared baking sheet, ensuring they are spaced about 1-2 inches apart to allow even cooking.

Bake the Meatballs: Transfer the baking sheet to the preheated oven and bake the meatballs for 18-20 minutes or until they are fully cooked and golden brown. You can check for doneness by cutting one in half to ensure there is no pink inside.

Add the Marinara Sauce: Once the meatballs are cooked, carefully remove the baking sheet from the oven. Pour the marinara sauce gently over the meatballs, covering them evenly.

Cheese It Up: Sprinkle the remaining mozzarella cheese generously over the top of the meatballs and marinara sauce. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and is bubbling with a slight golden hue.

Garnish and Serve: Take the baked meatballs out of the oven and let them cool for a few moments. For a lovely finishing touch, garnish with fresh basil leaves before serving. These tasty meatballs can be enjoyed as an appetizer, served gracefully over a bed of spaghetti, or nestled in a sub sandwich for a deliciously satisfying meal!
