Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

1 cup whole wheat breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

For the Zucchini Noodles:

4 medium zucchinis, spiralized

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

Instructions

Preheat the Oven:

    - Begin by preheating your oven to 400°F (200°C), ensuring it reaches the right temperature for even baking.

      Prepare the Chicken:

        - In a shallow dish, mix together the breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper until well combined.

          - In a separate shallow bowl, beat the eggs until frothy. Take each chicken breast, dip it into the beaten eggs, allowing the excess egg to drip off. Next, coat it generously with the breadcrumb mixture, pressing the crumbs onto the chicken to ensure a good, even covering.

            Bake the Chicken:

              - Arrange the breaded chicken breasts on a baking sheet lined with parchment paper to prevent sticking. Bake in the preheated oven for 20 minutes.

                - After 20 minutes, remove the chicken from the oven and spoon marinara sauce over each piece. Sprinkle the shredded mozzarella cheese on top.

                  - Return the baking sheet to the oven and bake for an additional 10 minutes, or until the chicken is fully cooked (check for an internal temperature of 165°F) and the cheese is melted, bubbly, and golden.

                    Prepare the Zucchini Noodles:

                      - While the chicken is baking, heat the olive oil in a large skillet over medium heat. Add the spiralized zucchini noodles to the skillet, seasoning them with salt, black pepper, and Italian seasoning.

                        - Sauté the zucchini noodles for about 3-4 minutes, just until slightly tender yet still retaining some firmness (al dente). Remove them from heat and set aside.

                          Serve:

                            - To plate the dish, create a bed of sautéed zucchini noodles on each plate. Carefully place a baked chicken breast on top, and garnish with fresh basil leaves for a pop of color. Optionally, serve with additional marinara sauce on the side for dipping.
