Ingredients

300g (10.5oz) pasta (choose from penne, fusilli, or spaghetti)

200g (7oz) block of feta cheese

500g (1.1lbs) cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust based on your spice preference)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional for added flavor)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) and allow it to preheat fully.

Prepare the Baking Dish: In a large oven-safe baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle 2 tablespoons of extra virgin olive oil over the top. Then, sprinkle the dried oregano, red pepper flakes, salt, and pepper over the mixture. Toss everything together to ensure the tomatoes and garlic are well-coated.

Add the Feta Cheese: Place the block of feta cheese in the middle of the baking dish, surrounded by the seasoned tomatoes. Drizzle the remaining olive oil generously over the feta, and season it with an additional pinch of salt and pepper to enhance the flavor.

Bake the Mixture: Carefully place the baking dish in the preheated oven and bake for approximately 30-35 minutes. You want the tomatoes to burst and soften, while the feta turns soft and begins to brown lightly.

Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente. Before draining the pasta, reserve 1 cup of the starchy pasta water, then drain the remaining water.

Combine Ingredients: Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the feta cheese and mix it thoroughly with the roasted tomatoes, creating a creamy sauce. Add the drained pasta to the baking dish and stir well to combine. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

Garnish and Serve: Serve the warm baked feta pasta in bowls, garnishing with fresh basil leaves. For an extra pop of flavor, sprinkle with lemon zest before serving to bring a refreshing brightness to the dish.

Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4 servings
