Ingredients

For the Meatballs:

1 pound ground beef (or substitute with ground turkey for a lighter option)

1/2 cup breadcrumbs (opt for panko for an extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh basil

1 large egg, beaten

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

For the Peach Sauce:

2 large ripe peaches, diced (peel if you prefer a smoother sauce)

1 tablespoon olive oil

1 tablespoon honey (or maple syrup for a vegan alternative)

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Instructions

Preheat the Oven:

Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to facilitate an easy cleanup after baking.

      Make the Meatball Mixture:

In a large mixing bowl, add the ground beef (or turkey), breadcrumbs, grated Parmesan, chopped basil, beaten egg, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if desired). Mix gently with your hands or a spatula until just combined. Be careful not to overmix, as this can lead to tough meatballs.

          Form the Meatballs:

With your hands or a small ice cream scoop, portion out the mixture and roll it into meatballs about 1.5 inches in diameter. Place each meatball on the prepared baking sheet, ensuring they are evenly spaced apart to bake correctly.

              Prepare the Peach Sauce:

In a medium-sized bowl, combine the diced peaches, olive oil, honey (or maple syrup), balsamic vinegar, thyme, salt, and pepper. Toss the ingredients gently until the peaches are thoroughly coated in the sauce.

                  Combine and Bake:

Once the meatballs are formed, spoon the peach sauce mixture generously over the top of each meatball, making sure to distribute it evenly.

                      Bake:

Transfer the baking sheet to the preheated oven and bake for 20-25 minutes. Ensure the meatballs are cooked through—use a meat thermometer to check that the internal temperature reaches 165°F (74°C). The peaches should be softened and lightly caramelized by this time.

                          Serve:

After baking, remove the meatballs from the oven and allow them to cool for a couple of minutes. Serve warm, drizzled with any remaining peach sauce, and feel free to garnish with additional fresh basil if desired. For a complete meal, pair with a side of fluffy rice or a vibrant fresh salad!
