Ingredients

3 medium zucchinis, thinly sliced

3 large ripe tomatoes, thinly sliced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh breadcrumbs (store-bought or homemade)

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1 teaspoon dried oregano

Salt and pepper to taste

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon red pepper flakes (optional for added heat)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s at the right temperature when you’re ready to bake.

Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced zucchinis and tomatoes. Drizzle with olive oil and balsamic vinegar, then add the minced garlic, dried oregano, and season with salt and pepper. If you like a bit of heat, sprinkle in the red pepper flakes. Toss everything together until the vegetables are well coated in the marinade. Allow them to marinate for approximately 10 minutes to absorb the flavors.

Layer the Vegetables: Lightly grease a 9x12 inch baking dish with olive oil. Begin layering the marinated zucchinis and tomatoes in the dish, alternating between the two and slightly overlapping the slices for an attractive display. Continue layering until all the vegetables are used, using a final layer of zucchini on top.

Combine the Toppings: In a separate bowl, mix together the fresh breadcrumbs, grated mozzarella, grated Parmesan cheese, and the chopped fresh basil. This mixture will create a crispy, cheesy topping for the gratin.

Assemble the Gratin: Evenly distribute the breadcrumb and cheese mixture over the layered zucchini and tomato slices, ensuring complete coverage to form a delicious crust once baked.

Bake: Place the assembled baking dish in the preheated oven. Bake for about 30-35 minutes, or until the gratin is bubbly and the top is beautifully golden brown, indicating that it’s ready to be enjoyed.

Cool & Serve: After baking, carefully remove the dish from the oven and let it cool for about 5 minutes before serving. For an extra touch of freshness, garnish with additional chopped basil if desired.

                Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 6

Enjoy this comforting and hearty dish as a delightful side or a satisfying light main course!
