Ingredients

4 large Portobello mushroom caps

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

4 whole grain burger buns

4 slices fresh mozzarella cheese

1 cup fresh arugula

1 large ripe tomato, sliced

Optional: pesto sauce for spreading

Instructions

Marinate the Mushrooms: In a large mixing bowl, whisk together the balsamic vinegar, extra virgin olive oil, minced garlic, dried oregano, sea salt, and black pepper until the mixture is well combined.

Prepare Portobello Caps: Gently clean the Portobello mushroom caps with a damp cloth to remove any dirt, then remove the stems. If you prefer a milder flavor, use a spoon to carefully scrape out the dark gills from the inside of the caps. Submerge the caps in the marinade, ensuring they are completely coated. Cover and let them marinate for at least 30 minutes, turning them halfway through to absorb the flavors evenly.

Preheat the Grill: Preheat your outdoor grill or grill pan to medium-high heat to ensure a good sear on the mushrooms.

Grill the Mushrooms: Carefully place the marinated Portobello caps onto the hot grill. Cook for approximately 5-7 minutes per side, or until the mushrooms are tender and showcase beautiful grill marks. In the last minute of grilling, place a slice of mozzarella cheese atop each Portobello to melt perfectly.

Toast the Buns: While the mushrooms are grilling, slice the whole grain burger buns in half. Lightly toast them on the grill until they achieve a golden brown color, enhancing their texture.

Assemble the Burgers: On the bottom half of each toasted bun, layer a grilled Portobello cap with melted mozzarella. Pile on a generous handful of fresh arugula and add a slice of ripe tomato for a burst of flavor. If you like, spread a dollop of pesto sauce on the top half of the bun for an added touch of zest.

Serve: Place the top half of each burger bun over the assembled filling, creating your tasty burger. Serve immediately and relish the delightful flavors of your Balsamic Grilled Portobello Burgers!
