8 oz (225g) pasta (preferably penne or fusilli)

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 cloves garlic, finely minced

1 tsp Dijon mustard

1 tsp honey (or maple syrup for a vegan alternative)

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup feta cheese, crumbled (optional)

Fresh basil leaves, for garnish

Toasted pine nuts, for additional crunch (optional)

Instructions
 

Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Once boiling, add the pasta and cook according to the package instructions until al dente. After cooking, drain the pasta and let it cool slightly in a colander.
