BBQ Chicken Stuffed Sweet Potatoes

2 large sweet potatoes

2 cups cooked shredded chicken (using rotisserie chicken works great!)

1 teaspoon garlic powder

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Rinse the sweet potatoes thoroughly under running water. Using a fork, prick them several times all over to allow steam to escape during baking. Drizzle a bit of olive oil on the skin and sprinkle a pinch of salt to enhance flavor.

      Bake the Sweet Potatoes: Arrange the sweet potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for approximately 45-60 minutes, or until they are tender and can be easily pierced with a fork. Be mindful that baking time may vary depending on the size of the sweet potatoes.

        Prepare the BBQ Chicken Filling: While the sweet potatoes are baking, scoop the cooked shredded chicken into a mixing bowl. Add the barbecue sauce, garlic powder, and a pinch of salt and pepper. Stir well until all the chicken is completely coated with the sauce mixture.
