Ingredients

For the BBQ Salmon:

4 salmon fillets (6 ounces each)

1/4 cup BBQ sauce (homemade or store-bought)

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon smoked paprika (optional)

For the Mango Avocado Salsa:

1 ripe mango, diced

1 ripe avocado, diced

1/2 red onion, finely chopped

1 small jalapeño, seeded and minced (optional)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt to taste

For the Bowls:

2 cups cooked brown rice or quinoa

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 lime, cut into wedges (for serving)

Extra cilantro for garnish

Instructions

Preheat Grill: Begin by preheating your grill to medium-high heat, aiming for a temperature between 375°F and 400°F.

Prepare the Salmon: Use a paper towel to pat the salmon fillets dry thoroughly. Drizzle olive oil over both sides of the fillets, ensuring they are coated evenly. Season each fillet generously with salt, pepper, and smoked paprika if you're using it. Then, evenly brush BBQ sauce over the skinless side of the salmon.

Grill the Salmon: Carefully place the seasoned salmon fillets on the grill, skin-side down. Close the grill lid and let them cook for 5-7 minutes, depending on their thickness. To enhance the flavor, brush additional BBQ sauce over the fillets halfway through the grilling time. After the initial cooking, flip the salmon gently and grill for an additional 3-5 minutes, or until the salmon is thoroughly cooked and flakes easily when tested with a fork. Once done, remove the fillets from the grill and set them aside.

Prepare the Salsa: In a mixing bowl, combine the diced mango and avocado with the finely chopped red onion and minced jalapeño (if using). Squeeze in the lime juice, then add the chopped cilantro and a pinch of salt. Gently mix all the ingredients together until well combined, and then set the salsa aside to allow the flavors to meld.

Assemble the Bowls: Take four serving bowls and start by layering the cooked brown rice or quinoa as the base. On top of the grains, add portions of black beans and corn. Finally, place a grilled salmon fillet in each bowl.

Add the Salsa: Generously spoon the mango avocado salsa over each piece of grilled salmon, allowing the fresh flavors to enhance the dish.

Garnish and Serve: To finish, place a lime wedge in each bowl and sprinkle with extra cilantro for a pop of color and flavor. Serve the bowls immediately while they are still warm and inviting!
