Beef and Broccoli Stir-Fry

1 lb flank steak, thinly sliced against the grain

4 cups broccoli florets (fresh or frozen)

3 tablespoons low-sodium soy sauce (plus extra for serving)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided (plus additional as needed)

4 cloves garlic, minced

1-inch piece of ginger, minced

1 tablespoon sesame oil

1 teaspoon sugar

1/4 teaspoon black pepper

2 green onions, chopped (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions
 

Marinate the Beef: In a medium mixing bowl, combine the sliced flank steak, 1 tablespoon of soy sauce, oyster sauce, cornstarch, sesame oil, sugar, and black pepper. Stir well to ensure the beef is evenly coated with the marinade. Allow it to marinate at room temperature for about 30 minutes, giving you time to prepare the other ingredients.

    Prepare the Broccoli: If using fresh broccoli, bring a pot of water to a boil. Add the broccoli florets to the boiling water and blanch for 2-3 minutes, or until they are bright green and tender-crisp. Drain the broccoli and immediately transfer it to an ice bath to halt cooking. For frozen broccoli, simply thaw thoroughly and set aside.

      Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Add the marinated beef in a single layer and allow it to cook undisturbed for about 2 minutes. Then, stir-fry the beef for an additional 2 minutes, or until browned and cooked to your liking. Once done, remove the beef from the skillet and set it aside on a plate.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Immediately add the minced garlic and ginger, stirring quickly for 20-30 seconds until fragrant. Take care not to let them burn, as this can affect the flavor of the dish.

          Combine Ingredients: Add the blanched broccoli to the skillet with the sautéed garlic and ginger. Toss together and cook for 1-2 minutes to combine the flavors. Return the cooked beef to the skillet and pour in the remaining 2 tablespoons of soy sauce. Stir everything together and cook for an additional 2 minutes, allowing to heat through thoroughly.

            Serve: Carefully transfer the beef and broccoli stir-fry to a serving dish. Garnish with the chopped green onions and a light drizzle of soy sauce if desired. Serve immediately over a bed of warm jasmine rice or alongside steaming noodles.
