For the Chia Jam:

2 cups mixed berries (such as strawberries, blueberries, and raspberries)

2 tablespoons maple syrup (adjust according to the sweetness of the berries)

2 tablespoons chia seeds

1 tablespoon fresh lemon juice

1/4 teaspoon pure vanilla extract

For the Bars:

1 cup rolled oats

1 cup almond flour (or substitute with any nut flour of your choice)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon sea salt

Instructions
 

Prepare the Chia Jam:

    - In a medium saucepan set over medium heat, combine the mixed berries, maple syrup, and lemon juice.

      - Allow this mixture to cook for approximately 5–7 minutes, gently stirring until the berries soften and release their juices to form a chunky sauce.

        - Once cooked, remove from heat and mix in the chia seeds and vanilla extract. Set aside to cool, allowing it to thicken for about 15 minutes.

          Preheat the Oven:

            - Preheat your oven to 350°F (175°C). Meanwhile, line an 8x8 inch baking dish with parchment paper, ensuring some overhang for easy removal later.

              Mix the Bar Base:

                - In a large mixing bowl, combine the rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, baking powder, and sea salt.

                  - Stir thoroughly until all the ingredients are well combined, forming a crumbly dough.

                    Assemble the Bars:

                      - Press approximately two-thirds of the oat mixture into the bottom of the prepared baking dish, forming a compact and even layer.

                        - Carefully spread the cooled chia jam across this base, ensuring it covers the entire surface evenly.

                          - Sprinkle the remaining oat mixture over the chia jam, pressing down lightly to secure it in place.

                            Bake:

                              - Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the edges become golden brown and the top feels set.

                                - Once done, remove from the oven and allow it to cool in the pan for at least 15 minutes. Use the parchment paper overhang to lift it out for easier handling.

                                  Cool and Slice:
