Ingredients

2 lbs pork tenderloin

2 cups fresh blackberries, plus extra for garnish if desired

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons Dijon mustard

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh rosemary sprigs for garnish (optional)

Instructions

Marinate the Pork: In a mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, minced garlic, chopped rosemary, salt, and black pepper until well combined. Set aside 1/4 cup of this marinade to use as a glaze later. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the remaining marinade over it. Seal the bag or cover the dish, then refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for roasting.

Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade, allowing any excess to drip off. Carefully place the tenderloin into the hot skillet and sear for about 3-4 minutes on each side until it develops a rich golden-brown crust.

Prepare the Glaze: While the pork is searing, take a small saucepan and combine the reserved marinade with the fresh blackberries. Bring the mixture to a gentle simmer over medium heat, using the back of a spoon to lightly mash the blackberries. Let it cook for about 5-7 minutes until the glaze thickens slightly. Remove the saucepan from the heat and set aside.

Roast the Pork: Once the pork is nicely seared, pour half of the blackberry glaze over the tenderloin. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C), ensuring it is cooked through but still juicy.

Baste and Finish: Halfway through the roasting process, brush the pork with additional blackberry glaze to keep it moist and flavorful. Once cooked, carefully remove the skillet from the oven and allow the pork to rest for 5-10 minutes. This resting period helps retain the juices when sliced.

Serve: After resting, slice the pork into medallions. Arrange the medallions on a serving plate and drizzle with the remaining blackberry balsamic glaze. If desired, garnish with fresh rosemary sprigs. This dish pairs beautifully with roasted vegetables or a crisp side salad for a well-rounded meal.
