8 oz rotini pasta

4 slices of bacon, cooked until crispy and chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped into bite-sized pieces

1/2 cup sharp cheddar cheese, shredded

1/4 cup green onions, sliced thin

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, approximately 8-10 minutes. Once cooked, drain in a colander and rinse under cold water to stop the cooking process. Set aside to cool.
