2 cups ripe heirloom tomatoes, quartered (preferably blush varieties)

1 tablespoon extra virgin olive oil

1 teaspoon balsamic vinegar

1 teaspoon honey

Sea salt and freshly cracked black pepper, to taste

8 oz fresh burrata cheese, preferably at room temperature

1/2 cup fresh basil leaves, torn into bite-sized pieces

1/4 cup pine nuts, lightly toasted

1/2 cup panko breadcrumbs

2 tablespoons finely grated Parmesan cheese

1 tablespoon fresh lemon juice

Zest of 1 lemon

Prepare the Tomatoes: In a mixing bowl, combine the quartered heirloom tomatoes with olive oil, balsamic vinegar, honey, sea salt, and freshly cracked black pepper.
