Ingredients

8 oz tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large eggs

1/2 cup diced Hatch green chilies (fresh or canned)

1/2 cup cooked and crumbled breakfast sausage (optional)

1/2 cup diced tomatoes

1/4 cup sliced green onions

1/4 cup sour cream

1 avocado, diced

Fresh cilantro leaves for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) so it's hot and ready when you assemble the nachos.

Prepare the Base: Take a large baking sheet and line it with parchment paper. Spread the tortilla chips out evenly across the sheet to create a solid base for your nachos.

Add the Cheese: Generously sprinkle half of the shredded cheddar and Monterey Jack cheeses over the tortilla chips, ensuring they are covered well for optimal melting.

Cook the Eggs: In a medium-sized skillet, crack the four eggs into a mixing bowl and whisk them until fully blended. Season your eggs with a pinch of salt and pepper. Heat your skillet over medium heat and gently scramble the eggs, stirring occasionally, until they are just set but still slightly soft.

Layer It Up: Once the eggs are cooked to your preference, fold in the cooked breakfast sausage (if you’re using it) along with the diced Hatch chilies. Stir gently to mix everything together, allowing the flavors to blend.

Assemble the Nachos: Spoon the egg and Hatch chili mixture evenly over the layer of tortilla chips. Make sure to distribute it well. Then, top it off with the remaining cheddar and Monterey Jack cheeses.

Bake the Nachos: Carefully place the baking sheet in your preheated oven. Bake for approximately 10-15 minutes, or until the cheese has melted and is bubbly and slightly golden.

Finish with Fresh Toppings: Once baked, remove the nachos from the oven and immediately top them with the diced tomatoes, sliced green onions, and the diced avocado. Add a generous drizzle of sour cream over the top.

Garnish: For that fresh, vibrant touch, scatter cilantro leaves on top of your nachos just before serving.

Serve Immediately: Serve the nachos hot, encouraging everyone to dig in and enjoy this delicious breakfast treat!
