Buffalo Chicken Egg Rolls

2 cups shredded cooked chicken (preferably from a rotisserie)

1/2 cup Buffalo wing sauce (adjust to your spice preference)

1/2 cup cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1/2 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

12 egg roll wrappers

Oil for frying (vegetable or canola)

Optional: blue cheese or ranch dressing for dipping

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, Buffalo wing sauce, softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, and a pinch of salt and pepper. Mix thoroughly with a spoon or spatula until all ingredients are evenly blended, creating a creamy and flavorful filling.

    Assemble the Egg Rolls: Place an egg roll wrapper on a clean, flat surface with one corner pointing towards you to form a diamond shape. Spoon approximately 2 tablespoons of the chicken filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in the left and right corners towards the center. Roll upwards tightly, sealing the wrapper around the filling. To secure the edges, use a little water on your fingers to moisten the seams. Repeat this process with the remaining egg roll wrappers and filling.

      Heat the Oil: In a deep frying pan or heavy pot, pour in about 2 inches of oil and heat it over medium-high heat. Use a thermometer to monitor the temperature, aiming for 350°F (175°C). To check if the oil is ready, drop in a small piece of bread; when it sizzles and bubbles, the oil is hot enough for frying.

        Fry the Egg Rolls: Once the oil is hot, carefully lower 3-4 egg rolls into the oil, taking care not to overcrowd the pan. Fry them for 3-4 minutes on each side, or until they are a luscious golden brown and crispy. Use a slotted spoon to lift each egg roll from the oil and transfer them to a plate lined with paper towels to absorb excess oil.
