Ingredients

8 oz (225 g) small pasta (such as rotini or farfalle)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini or ciliegine), drained

1/2 cup fresh basil leaves, torn or roughly chopped

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1/4 tsp salt

1/4 tsp black pepper

1/3 cup balsamic glaze (store-bought or homemade)

Optional: Red pepper flakes for an extra kick

Instructions

Cook the Pasta: In a large pot, bring salted water to a roaring boil. Add the small pasta and cook according to the package instructions until al dente, typically 7-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process. Allow it to cool thoroughly, then set aside.

Prepare the Vegetables: As the pasta cooks, wash the cherry tomatoes and cut them in half. Drain the mozzarella balls and place them in a bowl. Do not forget to tear or chop the fresh basil leaves for maximum flavor.

Combine Base Ingredients: In a large mixing bowl, add the cooled pasta along with the halved cherry tomatoes, drained mozzarella balls, and the freshly torn basil leaves. This is the foundation of your pasta salad.

Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and freshly cracked black pepper. This dressing will add flavor and richness to your salad.

Dress the Salad: Pour the prepared dressing over the pasta salad mixture in the large bowl. Gently toss all the ingredients together with a spatula or spoon until everything is well coated with the dressing.

Add Balsamic Glaze: Drizzle the balsamic glaze over the top of the salad. Use a gentle hand and toss the salad lightly again to ensure the glaze is evenly distributed without damaging the ingredients.

Taste and Adjust Seasoning: Take a moment to taste your creation. If needed, feel free to add additional salt, pepper, or a sprinkle of red pepper flakes for a spicy touch according to your preference.

Chill for Flavor: For the best results, cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes before serving. This allows all the flavors to meld beautifully.

Serve: Once chilled, serve the salad straight from the fridge or at room temperature. It’s perfect as a refreshing side dish or can stand alone as a light and delightful main course.
