For the Cauliflower Marinade:

1 medium head of cauliflower, cut into bite-sized florets

1 cup plain yogurt (choose either dairy or plant-based)

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric powder

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper to taste

For the Masala Sauce:

2 tablespoons vegetable oil or ghee

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch piece of fresh ginger, minced

1 can (14 oz) crushed tomatoes

1 teaspoon garam masala

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust according to your heat preference)

1 cup coconut milk or heavy cream

Fresh cilantro, finely chopped, for garnish

Salt to taste

Instructions

Marinate the Cauliflower: In a spacious mixing bowl, combine the yogurt, olive oil, lemon juice, garam masala, cumin, paprika, turmeric, garlic powder, ginger powder, salt, and pepper. Add the cauliflower florets and fold gently to ensure they are evenly coated in the marinade. Cover the bowl and let it chill in the refrigerator for a minimum of 30 minutes, or up to overnight for enhanced flavor.

Roast the Cauliflower: Preheat your oven to 425°F (220°C). Arrange the marinated cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, turning the florets halfway through, until they are crispy and golden brown.

Prepare the Masala Sauce: In a large skillet or saucepan, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and sauté for 5-7 minutes, stirring occasionally, until they become softened and turn a golden brown color.

Add Aromatics: Incorporate the minced garlic and ginger into the skillet, cooking for another 1-2 minutes until they release their inviting aroma.

Create the Sauce: Stir in the crushed tomatoes along with garam masala, ground coriander, ground cumin, turmeric, and chili powder. Allow the mixture to simmer for about 5-7 minutes so that the sauce slightly thickens and the flavors develop.

Finish the Sauce: Pour in the coconut milk or heavy cream, mixing well to combine. Season with salt to taste and let it simmer for an additional 5 minutes, encouraging the ingredients to meld together beautifully.

Combine: Carefully fold the roasted cauliflower florets into the rich masala sauce, ensuring each piece is well coated. Cook on low heat for an additional 2-3 minutes until everything is heated through.

Serve: Transfer the Cauliflower Tikka Masala to a vibrant serving dish, garnish with freshly chopped cilantro, and serve immediately with fluffy basmati rice or warm naan bread for a fulfilling meal.
