4 large round bread loaves (sourdough or boule recommended)

Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the finely diced onion and sauté for about 5 minutes, or until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute, just until fragrant.

    Add Vegetables: Add the fresh broccoli florets and diced potato to the pot. Sauté these ingredients together for 2-3 minutes, allowing them to soften slightly.

      Simmer the Soup: Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer. Cover the pot and cook the vegetables until they are tender, approximately 15-20 minutes.

        Blend the Soup: Using an immersion blender, carefully puree the soup until it reaches your desired consistency. For a more rustic texture, you can blend only half of the soup, leaving some chunks of vegetables intact.
