3 cloves garlic, minced

1 cup shredded sharp cheddar cheese

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra umami)

1 tablespoon cornstarch

2 tablespoons vegetable oil (such as canola or grapeseed)

1 teaspoon toasted sesame oil

Salt and freshly ground black pepper, to taste

Cooked rice or noodles, for serving

Marinate the Beef: In a mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce (if using), cornstarch, and a pinch of salt and pepper. Mix thoroughly to ensure the beef is well-coated. Set aside to marinate for 15 minutes, allowing the flavors to infuse.

    Blanch the Broccoli: As the beef marinates, bring a large pot of salted water to a rolling boil. Add the broccoli florets and blanch for 2-3 minutes until they turn bright green and are slightly tender yet still crisp. Immediately drain the broccoli and rinse under cold water to stop the cooking process. Set aside.

      Stir-Fry the Beef: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer without overcrowding the pan (you may need to do this in batches). Let it sear undisturbed for 2-3 minutes. After searing, stir-fry the beef until fully cooked and browned, about another 2 minutes. Remove the beef from the skillet and set aside on a plate.
