1 cup jasmine rice

2 cups chicken broth

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups fresh broccoli florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

Optional: red pepper flakes for a spicy kick

Cook the Rice: In a medium saucepan, combine the uncooked jasmine rice and chicken broth. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15 minutes, or until the rice is tender and all the liquid has been absorbed. Remove from heat and fluff the rice with a fork. Set aside.

    Prepare the Chicken: While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced chicken pieces to the skillet and season with garlic powder, onion powder, salt, and freshly ground black pepper. Cook the chicken for approximately 7-10 minutes, stirring occasionally, until it is golden brown and cooked through. Ensure the internal temperature reaches 165°F (75°C).

      Add Broccoli: Once the chicken is cooked, add the fresh broccoli florets to the skillet. Cover the skillet with a lid and steam the broccoli for an additional 5 minutes, allowing it to soften and turn a vibrant green.

        Combine Ingredients: After the broccoli is tender, reduce the heat to low. Stir in the cooked jasmine rice, the two tablespoons of butter, shredded sharp cheddar cheese, and grated Parmesan cheese.
