Ingredients

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup salsa

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for an added heat)

Instructions

In a large mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, shredded pepper jack cheese, salsa, chili powder, ground cumin, garlic powder, and onion powder. Stir thoroughly until all ingredients are evenly mixed and fully incorporated.

Lay one flour tortilla flat on a clean surface. Using a spatula or the back of a spoon, spread a generous layer of the chicken mixture over the tortilla, making sure to cover the entire surface while leaving approximately a half-inch border around the edges.

Starting at one end of the tortilla, carefully roll it up tightly into a log shape, ensuring you don’t squeeze too hard to keep the filling from spilling out.

After rolling, wrap the log securely in plastic wrap and refrigerate it for at least 30 minutes. This chilling step allows the pinwheels to firm up, making them much easier to slice.

Once chilled, unwrap the tortilla log and place it on a cutting board. With a sharp knife, slice the roll into 1-inch thick pinwheels, applying gentle pressure to ensure a clean cut.

Arrange the sliced pinwheels on a serving platter, and sprinkle with freshly chopped cilantro. For an extra kick, add the optional sliced jalapeños on top.

Serve immediately, or refrigerate for later enjoyment. These pinwheels can be served cold or at room temperature, making them an excellent appetizer or snack option.
