2 medium eggplants, sliced lengthwise into 1/4 inch thick slices

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese, divided

2 cups marinara sauce

1 large egg

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Eggplant: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Lay the sliced eggplant on the sheet and lightly brush both sides with olive oil. Season each slice with a pinch of salt and pepper. Roast the eggplant in the preheated oven for about 20 minutes, or until the slices are tender and have a golden hue. Once done, remove them from the oven and allow them to cool slightly.

    Make the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, 3/4 cup of the shredded mozzarella, grated Parmesan cheese, minced garlic, egg, dried basil, dried oregano, and a bit more salt and pepper to taste.
