1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (approximately 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (optional)

1 cup salsa

2 cups tortilla chips, crushed

2 cups shredded cheese (such as cheddar, Monterey Jack, or a cheese blend)

1 cup sour cream

1/2 cup green onions, sliced (for garnishing)

Fresh cilantro, chopped (for garnishing)

Instructions
 

Preheat the Oven: Start by setting your oven to preheat at 350°F (175°C) to ensure it's hot when the casserole is ready to bake.

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) along with the chopped onion. Sauté the mixture until the meat is browned and the onion becomes soft and translucent, which should take about 5-7 minutes. In the last minute of cooking, add the minced garlic for a fragrant finish.

      Season the Mixture: Once the meat is cooked, stir in the taco seasoning, black beans, corn, and diced tomatoes if you opted for them. Add the salsa to the mixture and stir well. Let it simmer on low heat for about 3-5 minutes, allowing the flavors to meld beautifully.

        Assemble the Casserole: Take a greased 9x13 inch baking dish and layer half of the crushed tortilla chips evenly on the bottom.
