1 lb ground beef or ground turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 cups shredded cheddar cheese, divided

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Cooking spray or olive oil for greasing

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a 9x13 inch casserole dish by greasing it with cooking spray or a drizzle of olive oil to prevent sticking.

    Cook the Ground Meat: In a large skillet over medium heat, add a splash of olive oil. Once the oil is hot, add the diced onion and sauté for approximately 3-4 minutes, or until the onion becomes translucent. Add the minced garlic and ground beef or turkey, breaking it apart with a spatula. Continue cooking until the meat is browned and fully cooked, which should take about 5-7 minutes.

      Incorporate the Seasonings: To the skillet, stir in the taco seasoning, rinsed black beans, diced tomatoes with green chilies, and corn. Mix everything thoroughly and let it simmer for about 5 minutes so the flavors meld together. Taste and adjust seasoning with salt and pepper as desired.
