1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (for topping)

Fresh parsley, chopped for garnish (optional)

Preheat the oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with olive oil or cooking spray to prevent sticking.

    Cook the quinoa: In a medium-sized pot, bring the vegetable broth to a rolling boil. Add the rinsed quinoa, reduce the heat to low, cover with a lid, and allow it to simmer for about 15 minutes, or until all the liquid has been absorbed. Once done, remove from the heat and let it sit for an additional 5 minutes. Fluff the quinoa with a fork before using.

      Sauté the vegetables: Heat a splash of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until they are fragrant and the onion is translucent, approximately 3-4 minutes. Next, incorporate the diced zucchini and bell pepper, sautéing for another 5 minutes. Finally, add the broccoli florets and cherry tomatoes, cooking for an additional 3 minutes until they are just tender.

        Combine ingredients: In a large mixing bowl, combine the cooked quinoa with the sautéed vegetables. Add the dried oregano, dried basil, salt, and black pepper. Stir well to ensure all ingredients are thoroughly mixed and evenly distributed.

          Assemble the casserole: Pour the quinoa and vegetable mixture into the prepared baking dish. Evenly sprinkle half of the cheddar and mozzarella cheese across the top. Gently mix this into the casserole, then add the remaining cheese on top, finishing with an even sprinkle of grated Parmesan cheese.

            Bake the casserole: Cover the baking dish tightly with aluminum foil (to avoid sticking, you may wish to spray the underside of the foil with cooking spray). After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and has formed a golden brown crust.
