4 medium zucchinis, thinly sliced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 large egg, beaten

1/2 cup grated Parmesan cheese

1 cup whole wheat breadcrumbs

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried Italian herbs (combination of oregano, basil, and thyme)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray to prevent sticking.

    Sauté the vegetables: In a large skillet set over medium heat, pour in 2 tablespoons of olive oil. Add the finely chopped onion and minced garlic, sautéing them until the onion becomes translucent and fragrant, about 3-4 minutes. Next, introduce the sliced zucchinis to the skillet and continue sautéing until they soften and begin to lightly brown, approximately 5-7 minutes. Season the mixture generously with salt, pepper, and the dried Italian herbs. Remove the skillet from heat and allow the mixture to cool for several minutes.

      Prepare the cheese mixture: In a large mixing bowl, combine the ricotta cheese, the beaten egg, and half of the shredded cheddar and mozzarella cheeses. Stir until the mixture is smooth and creamy. Once the zucchini mixture is cooled, fold it into the cheese mixture, ensuring an even distribution of the zucchini.
