Ingredients

12 ounces spaghetti or fettuccine

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup extra-virgin olive oil, plus extra for drizzling

1 teaspoon red pepper flakes (adjust to your spice preference)

Salt, to taste

Freshly cracked black pepper, to taste

1 cup fresh basil leaves, torn

8 ounces burrata cheese

Zest of 1 lemon

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Add the spaghetti or fettuccine and cook according to the package instructions until al dente. Just before draining, reserve 1 cup of the pasta cooking water to use later. Drain the pasta and set it aside.

Sauté Cherry Tomatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until the garlic is fragrant but not browned. Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and begin to burst and release their juices.

Combine Pasta and Sauce: Add the drained pasta directly into the skillet with the cooked cherry tomatoes. Toss well to combine, gradually adding the reserved pasta water a little at a time until you reach your desired level of creaminess. Season the pasta with salt and freshly cracked black pepper to taste.

Incorporate Fresh Ingredients: Remove the skillet from the heat. Gently fold in the torn basil leaves and lemon zest to brighten the dish and add a burst of fresh flavor.

Plate the Pasta: Serve the pasta in individual dishes. Tear the burrata cheese into pieces and place it generously over the pasta, allowing its creamy texture to mingle with the dish.

Serve: Drizzle a little more extra-virgin olive oil over each serving and finish with a sprinkle of freshly grated Parmesan cheese. Serve immediately to enjoy the delightful burst of flavors!
