Ingredients

1 cup rolled oats

1/2 cup tahini

1/2 cup packed brown sugar

1/4 cup granulated sugar

1/4 cup pure maple syrup

1/3 cup almond flour

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (such as walnuts or almonds, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to ensure your cookies won’t stick.

Mix the Wet Ingredients: In a large mixing bowl, combine the tahini, packed brown sugar, granulated sugar, pure maple syrup, and pure vanilla extract. Use a whisk to mix these ingredients together until the mixture is smooth and creamy.

Combine the Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, baking soda, and sea salt. Stir thoroughly to ensure an even distribution of the dry components.

Combine Wet and Dry Mixtures: Slowly add the dry ingredients to the wet mixture, gently folding them together with a spatula or wooden spoon until just combined. If you’re adding dark chocolate chips or chopped nuts, fold them into the dough at this stage.

Form the Cookies: Using a tablespoon or a small cookie scoop, scoop out rounded portions of the dough and place them on the prepared baking sheet. Make sure to leave about 2 inches of space between each cookie, as they will spread while baking.

Bake the Cookies: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies turn lightly golden. The centers might appear slightly underbaked, but they will continue to firm up as they cool.

Cooling Process: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes. After that, carefully transfer them to a wire rack to cool completely.

Serve and Enjoy: After your cookies have cooled, treat yourself to a delightful chewy tahini oat cookie, perhaps paired with a glass of milk or your favorite beverage for an extra special experience!
