1/2 cup chia seeds

2 cups almond milk (or your preferred milk alternative)

2 tablespoons pure maple syrup (or honey, if not vegan)

1 teaspoon pure vanilla extract

A pinch of sea salt

1 cup mixed fresh berries (such as strawberries, blueberries, and raspberries)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium-sized mixing bowl, add the chia seeds, almond milk, maple syrup, vanilla extract, and a pinch of sea salt. Use a whisk to combine the ingredients thoroughly, ensuring that there are no clumps of chia seeds remaining in the mixture.

    Allow the mixture to sit for about 10 minutes. After this time, whisk it again gently to break up any clumps that may have formed during the resting period.

      Once mixed, cover the bowl securely with plastic wrap or a lid and transfer it to the refrigerator. Let it chill for a minimum of 4 hours, or ideally overnight. This will give the chia seeds ample time to absorb the liquid and transform into a thick, pudding-like consistency.

        After the chilling time, remove the bowl from the refrigerator and give the pudding a good stir. If the texture is too thick for your tastes, add a splash more of almond milk and mix until you reach your preferred consistency.

          For serving, elegantly layer the chia seed pudding in individual bowls or clear glasses. Alternate layers of the pudding with the mixed berries, adding a few berries on top for a visually appealing effect.
