Ingredients

2 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup Italian-seasoned breadcrumbs

1 cup marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (plus extra for garnishing)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

Olive oil (for frying)

Cooked spaghetti or side salad (for serving)

Instructions

Prepare the Chicken: Preheat your oven to 400°F (200°C). Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken until they are about ½ inch thick. This ensures even cooking and tenderness.

Coat the Chicken: Create a dredging station by arranging three shallow dishes. In the first dish, add the flour. In the second, whisk the eggs until well combined. In the third dish, mix the breadcrumbs with garlic powder, onion powder, salt, and black pepper. Begin by dredging each chicken breast in the flour, making sure to shake off any excess. Next, dip the floured chicken into the egg mixture, allowing the excess to drip off before coating it in the breadcrumb mixture. Press the breadcrumbs onto the chicken firmly to ensure they adhere well.

Fry the Chicken: Heat about ¼ inch of olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the breaded chicken breasts in batches (avoid overcrowding the skillet). Fry the chicken for about 4-5 minutes per side, or until they are golden brown and fully cooked. Once cooked, transfer the chicken breasts to a plate lined with paper towels to drain excess oil.

Assemble the Dish: In a baking dish, spread a thin layer of marinara sauce across the bottom. Place the fried chicken breasts on top of the sauce. Generously spoon additional marinara sauce over each chicken breast to keep it moist, then sprinkle with shredded mozzarella and grated Parmesan cheese.

Bake: Place the baking dish in the preheated oven and bake for approximately 20 minutes, or until the cheese is bubbly and lightly golden, creating an irresistible crust.

Serve: Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil before serving. This classic chicken Parmesan pairs beautifully with a side of cooked spaghetti or a refreshing side salad to balance the flavors.
