Ingredients

4 slices of thick bread (sourdough or whole grain recommended)

4 large eggs

1 cup shredded sharp cheddar cheese

1 cup cooked chili (homemade or your favorite canned variety)

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

2 green onions, finely chopped (for garnish)

Fresh cilantro leaves, roughly chopped (for garnish)

Cooking spray or butter, for greasing the muffin tin

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

Prepare the Bread: Take each slice of bread and use a rolling pin to gently flatten them to about half their original thickness. Next, use a glass or small cookie cutter to cut a circle from the center of each slice to create a shallow cup shape.

Grease the Muffin Tin: Generously spray or butter the muffin tin slots. This will help prevent the bread from sticking and ensure easy removal after baking.

Create the Toast Cups: Carefully place each piece of flattened bread into the muffin tin, pressing it gently into the slot to form a cup that will hold your delicious filling.

Whisk the Eggs: In a medium-sized mixing bowl, crack the eggs and whisk them vigorously until the yolks and whites are well combined. Add the ground cumin, smoked paprika, salt, and black pepper, and whisk again until all the spices are fully incorporated.

Layer the Chili and Cheese: Spoon a tablespoon or so of the cooked chili into the bottom of each toast cup, just enough to cover the base. Then, pour the whisked egg mixture into each cup, filling them about three-quarters full. Top each cup with a generous sprinkle of shredded sharp cheddar cheese.

Bake: Place the muffin tin in the preheated oven and bake for approximately 15-20 minutes. You’ll know they’re done when the eggs are set, and the cheese is melted and bubbly with a light golden hue.

Garnish and Serve: After baking, remove the toast cups from the oven and allow them to cool for a few minutes. Carefully lift them out of the muffin tin. Before serving, garnish with the chopped green onions and fresh cilantro for an added burst of flavor and color.

Enjoy: Serve warm, and delight in these tasty toast cups as a fantastic breakfast, brunch treat, or anytime snack!
