14 oz (400g) firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons chili garlic sauce

1 tablespoon maple syrup or agave nectar

1 teaspoon rice vinegar

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

½ cup cherry tomatoes

Salt and pepper to taste

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)

Prepare the Tofu: Begin by cutting the pressed tofu into 1-inch cubes. This uniformity helps the tofu cook evenly and allows it to effectively absorb the marinade flavors.

    Make the Marinade: In a medium bowl, whisk together the soy sauce, sesame oil, chili garlic sauce, maple syrup, and rice vinegar until well combined. This mixture will infuse the tofu with a spicy, sweet, and savory flavor profile.

      Marinate the Tofu: Gently place the tofu cubes into the marinade, ensuring each piece is well-coated. Allow the tofu to marinate for at least 30 minutes, preferably in the refrigerator, to fully absorb the tantalizing flavors.
