1 block of firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon chili paste (adjust according to your heat preference)

2 tablespoons fresh lime juice

1 tablespoon sesame oil

1 ripe avocado, sliced thinly

1 cucumber, julienned

1 red bell pepper, sliced into thin strips

1 cup carrots, grated or shredded

1 cup fresh cilantro leaves, chopped

1 package of rice paper wrappers

Peanut dipping sauce (for serving)

Optional: sliced jalapeños for an extra kick of heat

Marinate the Tofu: In a medium-sized mixing bowl, whisk together the soy sauce, chili paste, lime juice, and sesame oil until well combined. Gently fold in the cubed tofu, ensuring each piece is thoroughly coated in the marinade. Cover the bowl with plastic wrap and let it marinate for at least 20 minutes while you prepare the remaining ingredients.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes to the skillet in a single layer. Cook for approximately 5-7 minutes, turning the tofu occasionally, until each piece is golden brown and has developed a slightly crispy exterior. Remove from heat and let cool for a moment.

      Prepare the Vegetables: Create your rice paper rolling station by gathering all the fresh ingredients. Arrange the avocado slices, julienned cucumber, thinly sliced red bell pepper, grated carrots, and chopped cilantro nearby for easy access.

        Soften the Rice Paper: Fill a large shallow bowl or dish with warm water. Take one rice paper wrapper and dip it into the water for about 10-15 seconds, or until it softens and becomes pliable. Gently lift the wrapper out of the water and lay it flat on a clean, damp kitchen towel or surface.

          Fill the Wrapper: On the lower third of the softened rice paper, layer a few pieces of the sautéed tofu, followed by slices of avocado, cucumber, red bell pepper, grated carrots, and a sprinkle of cilantro leaves. For added spice, include some sliced jalapeños if desired.
