Ingredients
  

1 cup orzo pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon freshly squeezed lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Orzo:

    - In a large pot, bring 4-6 cups of salted water to a rolling boil.

      - Add the orzo pasta and cook for 8-10 minutes or until it reaches an al dente texture, following the package instructions.

        - Once cooked, drain the orzo in a colander and rinse it under cold running water to halt the cooking process. Let it sit in the colander to cool completely.

          Prepare the Vegetables:

            - While the orzo cooks, wash and prep your vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, and sliced Kalamata olives. Mix thoroughly to distribute the ingredients evenly.
