Ingredients

1/2 cup unsalted butter

4 oz. semi-sweet chocolate, finely chopped

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 tsp pure vanilla extract

1/2 cup all-purpose flour

1/4 tsp salt

1/2 cup creamy peanut butter

Optional: Chopped peanuts or a sprinkle of sea salt for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare four individual ramekins by greasing them generously with butter and dusting with cocoa powder to prevent sticking.

Melt the Chocolate and Butter: In a microwave-safe bowl, combine the unsalted butter and finely chopped semi-sweet chocolate. Heat in the microwave in 20-second intervals, stirring well between each session, until the mixture is completely melted and smooth. Be cautious not to overheat.

Mix in Sugar: Once your chocolate and butter are melted and smooth, add in the powdered sugar. Stir thoroughly until the sugar is fully incorporated and the mixture is glossy.

Add Eggs and Vanilla: Add the eggs and egg yolks to the chocolate mixture, one at a time, whisking after each addition to ensure everything is well combined. Then stir in the pure vanilla extract until the batter is smooth.

Incorporate Dry Ingredients: Gently fold in the all-purpose flour and salt using a spatula or spoon. Mix until just combined; be careful not to overmix as this can affect the cake’s texture.

Prepare the Peanut Butter Filling: In a small bowl, slightly warm the creamy peanut butter in the microwave for about 10-15 seconds. This will make it easier to spoon into the batter.

Fill Ramekins: Evenly divide half of the chocolate batter among the four prepared ramekins. Create a small well in the center of each ramekin using a spoon, then place 1 tablespoon of the warmed peanut butter into each well. Cover the peanut butter with the remaining batter.

Bake: Arrange the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. You're looking for edges that are firm while the center remains soft and gooey.

Cool Slightly: Remove the baking sheet from the oven and let the lava cakes cool for 1-2 minutes. To help release them, carefully run a knife around the edges of each ramekin.

Serve: To serve, invert each ramekin onto a dessert plate and gently lift it off. If desired, dust the tops with additional powdered sugar and enhance with a sprinkle of chopped peanuts or a touch of sea salt for a delightful finish.

Enjoy: Serve the lava cakes immediately while the centers are still warm and indulgently gooey. For an extra luxurious touch, pair them with a scoop of vanilla ice cream!
