1 large egg

1/4 cup unsweetened applesauce

1/4 cup milk (use dairy or a non-dairy alternative)

1 teaspoon vanilla extract

1/4 cup melted butter (or substitute with coconut oil for a dairy-free option)

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor until fine. Transfer the grated zucchini to a clean kitchen towel and twist to wring out excess moisture. This step is crucial for preventing soggy donuts. Set the squeezed zucchini aside.

      Mix Dry Ingredients: In a spacious mixing bowl, combine the all-purpose flour, 1/2 cup sugar, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt. Whisk together until all dry ingredients are evenly blended.
