8 ounces rotini or fusilli pasta

2 cups cooked chicken breast, diced into bite-sized pieces

4 strips crispy bacon, chopped into small bits

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup crumbled blue cheese

1/4 cup fresh parsley, finely chopped

Salt and pepper to taste

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 garlic clove, minced

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package directions until al dente. Once done, drain the pasta and rinse it under cold water to halt the cooking process. Transfer the cooled pasta to a large mixing bowl.
