Ingredients

1 lb chicken breast, cut into 1-inch cubes

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons brown sugar

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

Bamboo skewers or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions

Marinate the Chicken: In a spacious mixing bowl, whisk together 1 cup of coconut milk, the zest and juice of 2 limes, 2 tablespoons of brown sugar, 2 tablespoons of soy sauce, 2 minced cloves of garlic, 1 teaspoon of freshly grated ginger, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of red pepper flakes for a kick. Mix until fully combined.

Add Chicken to Marinade: Next, introduce the cubed chicken breast to the marinade. Stir gently to coat each piece thoroughly. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, allowing the flavors to meld. For a more robust flavor, marinate for up to 4 hours.

Prepare the Skewers: If using bamboo skewers, make sure to soak them in water for at least 30 minutes beforehand to prevent them from burning on the grill. Preheat your grill to a medium-high heat setting.

Assemble Skewers: Carefully thread the marinated chicken cubes onto the skewers, ensuring there’s a small gap between each piece for optimal cooking.

Grill the Skewers: Once your grill is ready, place the skewers on the grill grates. Grill for approximately 5-7 minutes on each side, or until the chicken is fully cooked through and exhibits beautiful grill marks. To enhance the flavor, baste the chicken with any leftover marinade during grilling.

Serve: After grilling, remove the skewers from the grill and let them rest for about 1 minute. Serve them with fresh lime wedges on the side, and garnish with a sprinkle of chopped fresh cilantro for a vibrant touch.

Prep Time: 15 minutes | Total Time: 1 hour (including marinating) | Servings: 4

Presentation Tips: Arrange the skewers on a large platter, drizzle with a little extra coconut cream and lime juice, and add slices of lime and sprigs of cilantro for a colorful presentation that entices the senses.
