Ingredients

1 lb boneless, skinless chicken breast, diced into bite-sized pieces

4 cups low-sodium chicken broth (preferably homemade)

1 cup water

2 cups egg noodles (your preferred shape)

1 cup carrots, sliced into rounds or half-moons

1 cup celery, diced into small pieces

1 small onion, finely chopped

2 cloves garlic, minced or pressed

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp freshly ground black pepper

Salt, to taste

2 tbsp olive oil (or any cooking oil of your choice)

Fresh parsley, chopped, for garnish

Instructions

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium-high heat. When the oil shimmers, add the finely chopped onion, minced garlic, sliced carrots, and diced celery. Sauté for about 3-4 minutes, stirring occasionally, until the vegetables are softened and aromatic.

Cook Chicken: Add the diced chicken breast to the pot, mixing well with the sautéed vegetables. Cook for another 5 minutes, stirring occasionally until the chicken is no longer pink on the outside and has a light golden hue.

Add Liquids: Pour in the low-sodium chicken broth and water. Increase the heat and bring the mixture to a roaring boil before reducing the heat to medium-low for a gentle simmer.

Season Soup: Add the dried thyme, dried parsley, freshly ground black pepper, and salt to taste. Stir well and allow the soup to simmer for about 5 minutes to let the flavors develop and meld together.

Add Noodles: With the soup simmering, stir in the egg noodles. Cook according to the package instructions, generally around 5-7 minutes or until the noodles are cooked to al dente. Stir occasionally to prevent sticking.

Taste & Adjust: Once the noodles are tender, taste the soup and adjust the seasoning with more salt and pepper if desired.

Serve: Carefully ladle the hearty soup into individual bowls. Garnish each serving with a sprinkle of freshly chopped parsley for a burst of color and freshness. Enjoy this cozy bowl of soup while it's hot and comforting!
