Cozy Pumpkin & Sage Lasagna Rolls

9 lasagna noodles

2 cups roasted pumpkin puree (or canned)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)

2 cups fresh spinach, chopped

2 cups marinara sauce

Salt and pepper to taste

Olive oil for drizzling

Pinch of nutmeg (optional)

Cook the Noodles: Bring a large pot of salted water to a rolling boil. Cook the lasagna noodles according to package instructions until al dente. Once cooked, drain the noodles and lay them flat on a baking sheet to prevent them from sticking together.

    Prepare the Filling: In a spacious mixing bowl, combine the roasted pumpkin puree, ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, chopped sage, and chopped spinach. If using, add a pinch of nutmeg for an aromatic touch. Season the mixture generously with salt and pepper. Stir well until all ingredients are thoroughly blended.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Take one lasagna noodle and spread a generous portion of the pumpkin filling across its length. Carefully roll the noodle up, starting from one end and tucking the filling as you go. Repeat this process with the remaining noodles and filling until all are rolled.

        Layer with Sauce: In a 9x13 inch baking dish, spread a thin layer of marinara sauce to prevent the rolls from sticking. Position the lasagna rolls seam-side down in the dish. Pour the remaining marinara sauce evenly over the rolls, then top with the remaining mozzarella cheese. Finish with a light drizzle of olive oil for added flavor.

          Bake: To ensure even cooking and prevent sticking, cover the baking dish tightly with aluminum foil (altogether optional, but you can spray the foil with cooking spray for easier removal). Bake in the preheated oven for 25 minutes. After this, carefully remove the foil and continue baking for another 15 minutes, until the cheese is melted, bubbly, and lightly golden.

            Serve: Allow the lasagna rolls to cool for about 5 minutes before serving. Garnish each serving with extra chopped sage or a sprinkle of grated Parmesan cheese, if desired, for a delightful finishing touch.
